A rich, earthy and supple red blend from the northern reaches of Burgundy, where customarily, a touch of César was blended with Pinot Noir — this particular cuvée is a blend of 85% Pinot and 15% César. César, darker in color than Pinot, provides some heft, acidity and pigment to a grape variety that in cooler climates can skew wan and pale. The wine was raised in used barrels for 9 months. Domaine de la Cadette was founded in the late '80s in Vézelay, a subregion of Burgundy with soils of red and blue clay, and some limestone, not the more common Kimmeridgian marl found else where in the region.
